Spring Beetroot Soup

 

Spring has arrived! Ancient Chinese Medicine teachings say that it is time to leave the heavy slow cooked foods behind that have kept us warm in winter, and move to fresher lighter meals that cleanse - spring greens, lemons, watercress and sauerkraut are on the menu!

Most importantly, beetroot is a powerful superfood for spring time. It nourishes and cleanses our bodies to give us more energy after the long hibernation of winter. Follow along with me as I make my favourite spring beetroot soup…

Ingredients

  • 1 onion, peeled and chopped

  • 1 carrot, peeled and chopped

  • 1 potato, peeled and chopped

  • Optional 1-2 celery sticks

  • 3-4 beetroots, peeled and chopped

  • 1 tablespoon bouillon vegetable stock

  • 1 litre filtered water

  • 1 tablespoon cream or oat cream

  • Watercress to garnish
